Wordless Wednesday : Burrito Buns

 

 

Last night, dinner disaster struck in our house.  We had all the ingredients for (Kimba-friendly onion and garlic-free) burritos – mince, sour cream, tomato, lettuce, cheese, tomato paste, smoked paprika, avocado, canned beans and sweet corn.  And, of course, tortillas.  Except when I got home I realised the tortillas weren’t in fact on the kitchen bench.  They were in the bin.  Oops.

Necessity being the mother of invention and all that, not to mention the more important fact that having walked home peacefully from school, I had no wish to grab Boyo and jump into the car for a battle through peak hour traffic, I simply made something up.

You see before you, the burrito bun!  Simply make your meat mixture as per usual – we often make honey soy chicken for our burritos – and instead of filling a tortilla or taco shell, fill a yummy bread roll instead.  We used ciabatta rolls.

 

 

Boyo quite enjoys a spot of Instagramming.  He will point out quirky pictures to me, makes it his daily mission to help find the day’s prompt for Fat Mum Slim’s Photo of the Day, and now has taken to Instagramming his meals.

Today Boyo’s breakfast was an egglet (aka an omelet) with pancetta on sourdough toast.  Yumbo!

      I’m not a fan of the wraps – maybe because I’m too lazy to heat them other than in the microwave – so the Italian bread was fab!

    Yum! Some of our best meals are those where a key ingredient is missing! Makes me wonder why I take so long menu planning really!! I might try this – although my kids LIVE for wraps… That is what they ask for for dinner EVERY night…
